    • Simple Baked Potato Sliders! INGREDIENTS - 3 Russet Potatoes (cleaned) - 2 Large Eggs - 1 tbsp Olive Oil - 4 slices Bacon - 1 tbsp Italian Seasoning - 3 Green Onions - 2 cup Shredded Cheddar Cheese - Salt/Pepper (to taste) INSTRUCTIONS - Preheat oven to 375 degrees. - Cut the potatoes into approximately 1/2-inch slices. Use a brush to lightly coat with oil. Flip and repeat. Season with salt and pepper. - Bake the slices on a baking sheet in the oven for 25 minutes. - As the potatoes bake, cook the bacon over low heat and flip them periodically for even cooking. Set them aside once finished and keep the bacon drippings. - Also cook scramble and cook the eggs and set aside. - Remove the potato slices from the oven and brush with bacon drippings. - Flip and repeat. Bake for 10 more minutes. Crumble the bacon while you wait. - Decrease the heat to 350 degrees. Top the potatoes with eggs, shredded cheese and crumbled bacon. Place back in the oven until the cheese is melted, around 5 minutes. - Remove the potato slices from the oven. Top with Italian seasoning and green onions. INGREDIENTS - 1 1/2 cup All-Purpose Flour - 2 tbsp Sugar - 2 tsp Baking Powder - 1 1/3 cup Almond Milk - 2 tbsp Canola Oil - 1 Egg - Toppings (optional) INSTRUCTIONS - Whisk flour, sugar, and baking powder in a medium-sized bowl. - Add almond milk, 1 tablespoon canola oil, and egg to flour mixture. - Whisk until smooth and there are no clumps. - Heat pan with 1 tablespoon of canola oil over medium heat until oil shimmers. - Pour batter using 1/3 cup and cook until there are bubbles in the batter. - Flip once you see bubbles and cook the other side for an equivalent amount of time (1-2 minutes usually). - Once cooked, stack and serve with toppings of your choice. #recipe #recipes #caseyscookbook #food #foodie #cook #cooking #breakfast #pancake #breakfastideas #foodideas #yum #delicious #foodphotography

INGREDIENTS 1 1/2 lbs Russet Potatoes 1 1/2 lbs Ground Beef 1/2 can Corn 1/2 can Peas 1 tbsp Basil 2 tbsp Worcestershire Sauce 1 tbsp Butter 3/4 cup Low FODMAP Milk Shredded Cheese (to taste) Salt (to taste) Pepper (to taste) INSTRUCTIONS o Potato Prep o - Skin and chop all potatoes into 1 inch cubes. - Boil potato cubes in water until soft. - Drain potatoes and put in mixing bowl. - Mix in Milk, Butter, & Shredded Cheese (your preference for amount of cheese) while mashing the potatoes until all clumps are gone. - Add salt and pepper to taste. o Beef Prep o - Stove top fry the ground beef until nearly brown. - Drain fat and drippings from the pan. - Mix in Worcestershire Sauce, Basil, Salt & Pepper. - Continue cooking until fully browned and remove from heat. o Vegetables Prep o - Stove top cook peas and corn until soft. o Combining & Baking o - Preheat oven to 350F. - Layer meat and vegetables together in a baking pan or bowl. INGREDIENTS Caramelized Onion 1 tbsp Butter 1 tbsp Olive Oil 1 Vidalia Onion 1 pinch Brown Sugar Beef Patty 1 pound Ground Beef 1/4 tbsp Garlic Powder 1/4 tbsp Onion Powder 2 tsp Salt 2 tsp Pepper 1 tbsp Worcestershire Sauce Sourdough Bread 4 tbsp Butter 3 tbsp Mayonnaise 8 slices Swiss Cheese INSTRUCTIONS o Caramelized Onions o - Heat olive oil and butter over medium heat in a non-stick cooking pan or skillet. - Add sliced onions to the pan and saute until golden brown. This process can take between 50 minutes to and 1 hour if done correctly. If the onions are browning to quickly, simply add water to deglaze them and lower the heat a little. Add brown sugar to sweeten and salt to taste. o Patty Melt o - In a medium sized mixing bowl, mix ground beef, garlic powder, onion powder, worcestershire sauce, salt, and pepper. - Form beef into patties slightly larger than the bread slice you'll be using, they'll shrink when cooked. - Using any pan, cook the patties on medium heat on both sides until there's no pink in the middle. In a small bowl, mix the butter and mayonnaise until combined. - Spread the mayo/butter mixture on each piece of sourdough on one side. - Using a pan, place a slice of buttered sourdough into the pan, butter side down. Place 1 slice of swiss cheese on the dry side. Add caramelized onions over the cheese. - Place the beef patty over the onions and another slice of swiss cheese. -Finally, place another piece of sourdough with the buttered side up. - Cook until golden brown and the cheese is melted.
